Shiitake Mushroom Rolls with Ume & Shiso🍄🟫🐷
(Serves 4)
Ingredients:
- 8 shiitake mushrooms
- 8 pickled plums (umeboshi) or ume past 8 shiso leaves
- 16 slices thinly sliced pork
- [For the sauce]
- 1 tbsp each of soy sauce, mirin, sugar, and sake
Instructions:
1. Remove the stems from the shiitake mushrooms.
2. Mash the umeboshi (remove the pits if using whole plums) and spread the paste on the inside of the mushrooms.

3. Lay two slices of pork in a criss-cross shape.
4. Place a shiso leaf in the center where the pork overlaps.

5. Put a mushroom (ume-side down) on top of the shiso leaf.

6. Wrap the pork around the mushroom.


7. Pan-fry the wrapped mushrooms until golden brown.
8. Pour the sauce over them and simmer until glossy and well coated.
Tip:
You can also enjoy them without the sauce—just dip in ponzu for a lighter flavor!
